Melon de Bourgogne 70%, Folle Blanche 14%, Chardonnay 16%
Winter 2019/2020, my second pruning season at Domaine de la Providence. I imagine a different wine, singular, born of the blend of these three grapes. Melon B., the core, the belly, the carrier. Folle Blanche, the lance — vector of horizontal energy. Chardonnay, the binder, the hint of bitterness.
Imagine a walk along the coast just after high tide. The foam and sea spray carry gentle notes of seaweed, it smells of the ocean. You walk on oyster shells, and that delicate crunch is somehow reflected in the structure of the wine. On the palate, small delicate waves of yellow fruits and citrus follow one after another, with that sense of minerality that is at once maritime and salivating.
